I've been hunting Temple Nelemar in Teras for a while. Just wondering if there is a way to get essence of water from water elementals or greater water elementals? It would make sense if we can.

It would but you can't, and I believe it was even asked for at some point but no dice. If you want essence of water your best bet is to stalk the table in Icemule and the landing. I know frost giants drop it as well as ice giants, ice golems, and the lesser ice elementals.
