I have been looking more carefully into the use of weapons with UAC combat system. OK, using various weapons gives you a bonus to DF but drops the MM value. Apparently this does more damage, but with a lesser chance of getting a hit. Sounds pretty much like a wash to me. But then I noted that using an enchanted weapon adds to the UAF, which then should increase hit probability. So, would using a high enchant weapon bring the hit probability back up enough to make it worth while to use one?

Here's a clip of some unarmed combat with and without weapons. First, just using 4x handwraps, then a 0x tiger claw, then a 4x tiger claw. Analysis, anyone? I'm assuming the MM rises on the second attack due to the target being stunned? Also, it looks like the MM keeps going down as the weapon enchant rises, which means to me that the designers wanted to offset any possibility of getting a real bonus from weapon use.

From my experience, generally holding a weapon is not worth it. UAF is far less important the the drop in MM, and the DF is negligible to me. Considering you ambush as well, I would say all but the most powerful of weapons would not be worthwhile.

It has been said that UAC never intended held weapons to be a boon.

The only time I ever use them is if my bless wears off (I keep a tiger-claw backup) or when elemental or extra magic is needed (Such as Stone Sentinels, if you punch them you get hurt. And cold things need fire weapons, etc.)

Ah, I was wondering about them. My rogue is just about old enough to start hunting there. I was considering using a sai and just ambushing them; I'll have to see if UAC and a tiger claw are more effective.

Stone/illoke goes easy with 4x handwraps. TWC with hot&cold brawling weapons makes a fun alternative, but doesn't really compete with punch/grapple/kick for speed.
