If our special abilities are suppose to teach anatomy, is there a particular reason harvest teaches skinning instead of first aid?

Because you're removing a portion of its body, similar to skinning.

this is a good thing, actually. It allows you to learn skinning on creatures which are not skinnable. such as sand sprites, swains,raiders, etc. As long as they aren't undead <our rituals don't work on undead.>
