It's been suggested in the past. I think the response was "If we ever decide to make this it will come with a probability of death-causing explosion" or something like that.

I totally think we should have a theremin or a magical equivalent.

I also once had inklings of an idea for magical instruments. Floating spheres that glow as they give off different chimes, a giant towering metal organ that can only be operated with Elemental air manipulation, a series of winding tiny pipes, that kind of thing.

Also, ahem, lightning/tesla coil instruments. Yes I really do think these would be awesome.
