If you really wanted to get into it, you could have people seek out different flowers/gems to dry and grind up into powders. Then you would just need gum arabic to transform them into basic medieval inks and paints.

I might suggest, offering enchanters the option to enchant a temporary tattoo that's painted on someone with either a stamina, strength, reflex, agility bonus, and/or a weapons bonus of some kind. You might also allow painting enchanters to paint upon your weapon and shield and also enchant those with a bonus that gets used.

I seem to remember this being a rarified skill when I was playing that a particular MMO and only a small number of people were capable.

If you want to truly get into the spirit of 'medieval' then the inks wouldn't be in ink pots at all they would be mixed with clay, honey and dried into 'ink sticks' which only when used are mixed when ground with a little water in an inkwell. Wet Inksticks could be used to directly apply thick layers of pigment, but for more delicate applications a brush would be required.
