Barring any guild special things, I don't think there are attacks that don't use any of a particular damage stat, but there are attacks that favor/disfavor certain attack stats.

So if you have a no/no/heavy weapon and start jabbing with it, you'll still be doing damage. You'd just be better off trying to do something that wasn't a jab.
